Three-cheese Muffins
Ingredients:
- 2 1/2 cups self-raising flour
- 1/2 cup grated parmesan
- 2 teaspoons baking powder
- 2 tablespoons TGS Co Pepperberry Mustard
- 1 cup grated cheddar cheese
- 1 cup crumbled feta
- 1 cup chopped parsley
- 75g camembert or brie, cut into chunks, plus extra to make a small square for the top of each muffin
- 2 eggs
- 125 melted butter
- 375ml milk (more if needed)
Method:
- Sift the dry ingredients into a bowl and mix in the prepared cheeses and parsley
- In a separate bowl, whisk together the eggs, melted butter and milk and lightly stir into the dry ingredients
- Mixture should not be too runny as the cheeses melt
- Grease a large 8-hole muffin tray well
- Cook at 190C for about 25 minutes
Makes 8 large muffins
