Three-cheese Muffins


Ingredients:
  • 2 1/2 cups self-raising flour
  • 1/2 cup grated parmesan
  • 2 teaspoons baking powder
  • 2 tablespoons TGS Co Pepperberry Mustard
  • 1 cup grated cheddar cheese
  • 1 cup crumbled feta
  • 1 cup chopped parsley
  • 75g camembert or brie, cut into chunks, plus extra to make a small square for the top of each muffin
  • 2 eggs
  • 125 melted butter
  • 375ml milk (more if needed)
Method:
  • Sift the dry ingredients into a bowl and mix in the prepared cheeses and parsley
  • In a separate bowl, whisk together the eggs, melted butter and milk and lightly stir into the dry ingredients
  • Mixture should not be too runny as the cheeses melt
  • Grease a large 8-hole muffin tray well
  • Cook at 190C for about 25 minutes

Makes 8 large muffins
