Yoghurt & Berryfruit Popsicles


Ingredients:
  • 250g Tasmanian Gourmet Sauce's Berryfruit sauce - either raspberry, blackberry, loganberry, blueberry or boysenberry
  • 8 popsicle moulds and paddle sticks
  • 2 egg whites
  • 2 tbs caster sugar
  • 250g natural yoghurt
Method:
  • Place 1tbs of chosen berry sauce into each mould and freeze until set
  • Use an electric beater to beat egg whites until frothy, gradually adding sugar until mixture is glossy and stiff
  • Combine yoghurt and remaining sauce, then gently fold in egg whites
  • When berry sauce in the moulds is frozen, add the yoghurt mixture and return to the freezer
  • When mixture if firm, add stick and freeze until set

Makes 8 popsicles
