Pork with Tasmanian Gourmet Sauce's Apricot Chutney
Ingredients:
- 500g pork fillets
- 60g butter
- 1 onion, sliced
- 1 tsp. curry powder
- 1 tsp. Tasmanian Gourmet Sauce's Apricot Chutney
- 2 tsp. light soy sauce
- 1 tsp. lemon juice
Method:
- Melt butter in pan, add onion, curry powder, Apricot Chutney and lemon juice
- Stir over low heat
- Place pork in greased shallow ovenproof dish in a single layer
- Pour sauce over, bake uncovered in a moderate oven for about 15 mins until pork is tender
- Slice pork into medallions, serve on a bed of rice with a green salad
