Pork with Tasmanian Gourmet Sauce's Apricot Chutney


Ingredients:
  • 500g pork fillets
  • 60g butter
  • 1 onion, sliced
  • 1 tsp. curry powder
  • 1 tsp. Tasmanian Gourmet Sauce's Apricot Chutney
  • 2 tsp. light soy sauce
  • 1 tsp. lemon juice
Method:
  • Melt butter in pan, add onion, curry powder, Apricot Chutney and lemon juice
  • Stir over low heat
  • Place pork in greased shallow ovenproof dish in a single layer
  • Pour sauce over, bake uncovered in a moderate oven for about 15 mins until pork is tender
  • Slice pork into medallions, serve on a bed of rice with a green salad
